The Grandma Zone: Scotch Bars
Having now made this myself, I can say that butter is the obvious choice unless you are baking for a fleishig meal. Butter represents a significant upgrade in flavor. You might try coconut oil in place of shortening if you like the flavor, but I have not tried this myself.
- 1/2 cup shortening (or butter)
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/2 tsp vanilla
- 1 egg yolk
- 1/2 cup sifted (all purpose) flour
- 1/4 tsp salt
- 1/2 cup rolled oats
- 1 pkg chocolate chips
- handful/half cup of chopped nuts, your choice
Cream shortening. Add sugars. Add egg yolk (and vanilla). Beat until fluffy.
Stir in (salt,) flour and rolled oats.
Spread in an 11" X 7" greased pan.
Bake at 350 °F for 20 - 25 minutes.
Remove from oven and cool for 10 minutes.
Melt the package of chocolate chips in a bowl.
Spread the melted chocolate over the bars and sprinkle with the nuts.
Cut when cool.
