The Grandma Zone: Leek Croquettes

I remember her making these on occasion, especially in the latter half of Pesach. They were simple but tasty. The instructions are a bit vague.

Cut off the top part of leek (tough part) and bottom part.

Slit the leeks down the middle and cut into pieces.

Boil until tender in water.

Put the boiled leeks in a strainer and mash with hands until all the water is out.

Add the eggs (beaten), matzah meal, salt and pepper to taste.

Fry in hot oil like salmon croquettes.
